I have made MANY versions of strawberry desserts in my quest for greatness, and here’s why I think these are the best.

They are low maintenance. They are extremely juicy and jammy when using amazing fresh strawberries, but they still work with frozen strawberries for convenience! SO DELICIOUS.

1. Strawberry Shortcake Cookies

If you’re on the hunt for something that travels well, is a breeze to make, and packs all the goodness of strawberries and cream into one perfect bite, you absolutely have to try these cookies.

Using cold butter in your cookie dough is the secret here; it makes the cookies extra tender, almost like little biscuits.

And if you find it a little tricky to mix in the chopped strawberries, don’t sweat it. You can just add them at the very end after you’ve already formed your cookie dough balls. It works like a charm!

2. Strawberry Chocolate Mousse Cake

Okay, if I scared you before by suggesting you should choose strawberries over chocolate, don’t you worry. I’ve got you covered with this gorgeously balanced mousse cake.
